You should not be "using" any AP's when you are running Netstumbler. Netstumbler is a logging/surveying tool, and as such won't function optimally if you are connected to (i.e. using) any AP's while Netstumbler is scanning.

You should make a profile in your Orinoco client manager, which sets the SSID to "ANY" (without the quotes), unbind the TCP/IP protocol from the netcard in the network connection properties, and then run Netstumbler.

As for connecting to different AP's when not using Netstumbler, I refer you to your card's clientmanager documentation. It is all stated there, if you can't deduct the procedure from the first part of the above paragraph
